Fried Fish

Ingredients:

  • Fish fillet 1
  • Ginger garlic paste 1 tbsp
  • Black pepper ½ tsp
  • Crushed red pepper ½ tsp
  • Egg half
  • Flour 2 – 3 tbsp
  • Desiccated coconut 2 – 3 tbsp
  • Mayonnaise ½ cup
  • Chili garlic sauce ¼ cup
  • Salt to taste

Method:

  1. Cut fish into cubes, marinate with 1 tbsp ginger garlic paste, salt to taste, ½ tsp black pepper, ½ tsp crushed red pepper, half egg and 2 – 3 tbsp flour. Mix well.
  2. Now coat with 2 – 2 tbsp desiccated coconut and deep fry on low flame till golden brown.
  3. For making sauce mix together ¼ cup chili garlic sauce, salt to taste, ½ cup mayonnaise and a little black pepper. Add a little water to make in desired consistency.
  4. Serve with fried fish.

Saucy Kabab

Ingredients

  • Beef mince ½ kg
  • Onion 1
  • Green chilies 3 – 4
  • Coriander leaves ¼ bunch
  • Mint leaves ¼ bunch
  • Tomato puree 1 cup
  • Chili powder 1 tsp
  • Crushed red pepper 1 tsp
  • Yogurt 125 gm
  • Turmeric ½ tsp
  • All spice powder ½ tsp
  • Ginger garlic paste 2 tbsp
  • Salt to taste
  • Oil 3 – 4 tbsp
  • Crushed cumin seeds 1 tsp
  • Dry ginger powder ¼ tsp

Method

  1. Put ½ kg mince, 1 cubed onion, 3 – 4 green chilies, ¼ bunch of coriander leaves, ¼ bunch of mint leaves, salt to taste and 1 tbsp ginger garlic paste in a chopper, chopperize well and remove mixture in a bowl.
  2. Now form into small round patties, shallow fry with a little oil till golden brown.
  3. Heat a little oil in another wok, add 2 tbsp ginger garlic paste and fry for 1 – 2 minutes. Then add 1 cup tomato puree.
  4. Then add 1 tsp chili powder, 1 tsp crushed red pepper, ½ tsp turmeric, ½ tsp allspice powder, salt to taste, 1 tsp crushed cumin seeds and ¼ tsp dry mango powder. Fry for 1 – 2 minutes.
  5. Now add 125 gm whipped yogurt and cook for 1 – 2 minutes.
  6. Add in fried patties, mix a little and simmer for 1 – 2 minutes till oil comes on top.
  7. Dish it out and serve hot.

Fried Wonton

Ingredients

  • Chicken mince 125 gm
  • Egg 1
  • Flour 1 tbsp
  • Salt to taste
  • Crushed red pepper ½ tsp
  • Chaat masala ½ tsp
  • Black pepper ¼ tsp
  • Manda strips 3 – 4

Method

  1. In a bowl mix together 125 gm chicken mince, ½ tsp crushed red pepper, ½ tsp chaat masala, ¼ tsp black pepper powder and salt to taste. Mix well.
  2. In another bowl beat together 1 egg, 1 tbsp flour and salt to taste.
  3. Cut manda strips into squares. Put a little chicken mince in centre of each square, fold in wonton shape and seal using egg batter.
  4. Then deep fry wontons till golden brown and crisp.
